um, so, yes. bison. just the sound of a lean, hormone-free, delicious meat makes me happy. add an allrecipes partnership with the bison council and a gift of ground bison from high plains bison, and now everyone in our house is waiting excitedly for the delivery to arrive so we can try the highly acclaimed meat.
i served ours open-faced, as the recipe suggests, on paleo herb buns from multiply delicious.
we haven’t found it in stores near us yet, but we now know we can order it and it comes magically packaged in a styrofoam cooler and ice packs. 🙂
this recipe for stuffed bison burgers with caramelized figs and shallots is mouthwateringly delicious. i ate one for dinner. i ate one for lunch the next day. and for breakfast the following day after that. i know, right?
one tip: when i hit the grocery for gruyere, smoked gouda was on sale for $2 less per pound. i tasted both, and found them very similar, so i took the savings. the gouda was perfect – smoky and dense, the perfect counter for the sweet figs. i know some don’t, but i love the little crunch of fig seeds!
