grain-free banana muffins with bacon streusel

- ¼ cup maple syrup or honey
- ¼ cup melted, salted butter
- ½ cup almond milk
- 4 eggs
- ¼ cup arrowroot
- ½ cup almond flour
- ¾ cup coconut flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1½ bananas, mashed
- For streusel:
- ¼ cup maple sugar or coconut sugar
- 2 tablespoons salted butter
- ¼ cup crushed almonds, walnuts or pecans
- 6 slices cooked, crumbled bacon
- Preheat oven to 350 degrees.
- Prepare 12 muffin cups in a muffin pan or grease 12 silicone muffin cups.
- Combine maple syrup, melted butter, almond milk, and eggs in the bowl of a stand mixer.
- Mix until well blended.
- In a separate bowl, whisk together arrowroot, almond flour, and coconut flour with baking powder and salt.
- Combine wet and dry ingredients and blend until combined.
- Stir in banana.
- Pour into 12 muffin cups.
- Meanwhile, use a fork to crumble together maple sugar and butter with crushed nuts.
- Stir in bacon.
- Evenly divide topping over muffins.
- Bake at 350 degrees for 11-13 minutes, or until a toothpick inserted into muffins comes out clean.
